Cheese and Vegetable Croquettes

INGREDIENTS

1/2Boiled and finely chopped carrot

1/4Finely chopped capsicum

1 tbspBoiled Green peas

1 tbspBoiled corn

1Finely chopped Green Chilli

A handfulChopped coriander

6 tbspD’Lecta cheese spread

8Slices of bread

2 cupsOil

DIRECTIONS

Mix together the carrots, capsicum, green peas, corn, green chilli, coriander and the cheese spread together.

Take the bread slices and trim off the sides.

Take a bowl of water, dip each bread slice into the bowl and squeeze the excess water.

Fill each bread slice with the vegetable mixture and make it into a round shape.

Repeat with the remaining vegetable mixture.

Heat oil in a kadai.

Deep fry the bread rolls in hot oil until golden and crisp.

Serve hot with ketchup.
