Cheddar Cheese and Almond Biscotti

1 cup Flour

1/2 tspBaking powder

3/4 tspSalt

1/2 tsp Chilli powder

50 gAlmond flakes

2 Eggs

1 cupGrated D’Lecta natural cheddar cheese


Preheat an oven at 175 degree celcius.

Mix together the eggs and the cheddar cheese.

Sieve the flour, salt, chilli powder and the baking powder together.

Add the almond flakes to the flour.

Put the flour mixture in the eggs and mix well until it forms a dough.

Do not knead the dough too much, it should just come together.

Shape the dough into a 8-10 inch log.

Bake in the oven for 25 minutes or until firm to touch.

Remove from the oven and let it cool for 15 minutes.

Once cooled, slice the loaf into thin slices and arrange on a baking tray.

Bake the slices again for 8-10 minutes until light golden and then turn them upside down and bake again for 8-10 minutes until light golden.

Remove from the oven, let them cool and then store in airtight container.

It will remain good for at least 1 week.
