  • 1Brinjal, chopped        
  • 30 gmsCoriander, chopped
  • 4 cloveGarlic, chopped
  • 20 gmsOnion, chopped
  • 30 gmsCarrot, chopped
  • 30 gmsTomato puree
  • 5Black olives
  • 5Cherry tomato
  • 150 gmsWholemeal spaghetti
  • 100 gmsD'lecta Feta Cheese
  • As requiredSalt
  • As requiredPepper
Step 1

Heat butter in a non-stick frying pan and fry the garlic, carrot, onion, brinjal  for 5 mins, stirring, until just soft.

Step 2

Add the olives, tomato purée, and 200ml water, cover and cook for 5 mins more.

Step 3

Cook the spaghetti following pack instructions. then drain.

Step 4

Toss with the cooked veg, cherry tomatoes and coriander with seasoning salt and pepper.

Step 5

Spread crumbled feta on top of spaghetti.

Step 6

Serve hot.
