Coffee walnut cake by SuperChef Manjiri Gangurde
- For cake sponge
- 1 & 1/2 cupAll purpose flour
- 1/4th cupCocoa powder
- 1 tspBaking powder
- 1/2 tspBaking soda
- 1/4th cupHot coffee
- 1 & 1/2th cupGranulated sugar
- 100 gmsDlecta unsalted butter
- 1/4th cupDlecta Milk
- 1/4th cupYogurt
- For Frosting
- 100 gmsDlecta dairy free whip cream
- 20 gmsCoffee powder
- For Filling
- 1 cupRoughly chopped roasted walnuts
In a bowl, mix in dlecta unsalted butter (room temperature), granulated sugar till soft and fluffy.
In a separate bowl, mix in flour,cocoa powder,baking powder,baking soda and add in to the wet ingredients.
Add in yogurt and milk and mix well.
Finally add in hot coffee and give a gentle mix
Line a baking tin and pour the batter into it.Bake for 40 mins at 180°.
After the cake is baked and cooled down completely, cut it into 3 equal slices.
Bring the whip cream to room temperature and whip it till soft peaks.
Apply whipped cream frosting in between each layer and finally garnish it with chopped walnuts.Set the cake into the fridge for 2 hours.
