  • 3Big size tomatoes, diced
  • 1Onion, sliced
  • 1Capsicum, sliced
  • 2Garlic, minced
  • 1/4 tspSalt
  • 200 gLong-grain white rice
  • 2 cupsWater
  • 1/2 tspDried basil
  • 1/2 tspGround black pepper
  • 1/2 tspDried thyme
  • 100gD'lecta shredded mozzarella cheese
Step 1

In a medium saucepan take some water and add tomatoes, onions, capsicum, garlic, salt. Cook & stir over high heat until the onions & tomatoes are very soft and the water has nearly evaporated.

Step 2

Stir in the rice, then add the water, basil, pepper, thyme. Bring to a boil. Reduce the heat to low, cover & simmer for 25 to 30 minutes, or until the rice is tender and the liquid has been absorbed. Add 50g mozzarella and mix.

Step 3

Remove the pan from the heat and transfer the rice to a serving bowl. Sprinkle with remaining 50 g mozzarella and serve.
